    Almond milk is quite a hype now a days but it is nothing new. Already in Middle Ages people loved cook with or drink almond milk. It is a plant based alternativ to cow milk. It tastes pretty good but what is all about this milk?   Almond milk is actually just made out of water and almond oil. The best almond milk is the homemade. I did not find one milk that tastes as good as homemade one and the most almond milks contains stabilizers or other thing you do not really want to consume. So how to make almond milk by yourself? INGREDIENTS: peeled and soaked almonds, water. Soak some peeled almond in cold water over night or longer. There is nothing better then a refreshing ice cream with this hot weather. I’m enjoying la dolce vita in Tuscany right now and it’s incredibly hot. I’m seeking for gelato. And I’m looking forward to this fantastic nice cream waiting for me in my freezer at home. Sweets do not need to be unhealthy or artificial. The vanilla avocado nice cream is the best proof of it. I love simple, tasty and healthy food. I don’t understand, why healthy for a lot of people still means it tastes bad. Mostly it tastes even better, because of all the good and flavory ingredients. It may sound strange but it is the best vanilla pudding I ever had! Inspired by the beautiful Lynn Heaven Healthy I made this healthy and super yummy vanilla pudding. As a kid I ate a lot of chocolate spread. There is a very famous one from Germany called Nutella. But all the chocolate spreads have a lot of bad ingredients. So I had to find a way to get a delicious and healthy homemade chocolate spread. And here we are! Summer finally arrived in Switzerland! I need something ice cold, like ice cream but healthy. That’s why I am a huge fan of nice cream (=nice (and healthy) ice cream). It is so healthy, you could even eat it for breakfast. I do sometimes :-). For a nice crunch I add some taco nips to the ice cream. Yummy! Here I made some oriental cones with chickpea flour and a slight taste of cardamom. They are not as healthy as the ice cream but anyways they look so pretty and taste so good. I love to decorate the cones with chocolate and pistachio trimming. And the best about this ice cream: Unfrozen it is a super delicious chocolate pudding! Who does not love macarons! Even if they are very sugary and not the healthiest option, sometimes they are just the best that can happen. And I really love to make them. Its process comes close to meditation. Macarons takes its time but it is worthwhile! I mean look at them, they are so gorgeous and a perfect small gift! This time I made four different flavors: Vanilla-Baileys, strawberry, pistachio and chocolate-espresso. The first three are filled with butter cream and the chocolate ones with chocolate ganache. When you make macarons it is very imported to you work exact to get a good result. So never overheat the sugar. Its perfect temperature is at 115 degrees celsius. And the dough should be fluffy with a perfect consistency: kind of liquid but not too liquid. But even if your macarons do not look perfekt they going to take great anyway! I just acquire a taste for smoothie bowls. This won’t be the last post about smoothie bowls, promised! What is better than a creamy fruity and healthy breakfast? Just the energy boost you need in the morning. You can almost combine everything respectively what ever you have at home: Fruits, nuts, greens, superfoods… Today I’m going for a açai smoothie bowl. Açai is super healthy and you can buy it as a freeze-dried powder. So whenever you are in the mood for some açai you have some and you don’t have to worry about the storage life. To get the smoothie bowl creamy I use bananas oder chia seeds or both of it. Maca powder thickens the smoothie as well a little bit.
