Guilt free starwberry tarts

Summer is a combination of sun, swimming and lots of berries. I could eat them all day long. They’re so beautiful, colorful, vitamin packed and super tasty. So, what’s better for a light summer dessert? As I don’t eat processed sugar, this dessert is (as usually on my blog :)) totally guilt free. It’s a high fiber tart pastry, yoghurt cream and berry topping. You can literally eat them for breakfast. Recipe inspiration Pastry: flaxseed flour, oat flour, almond flour, coconut oil, flaxseed egg, pinch of sea salt, little bit of Marple sirup Hint: flaxseed egg is flaxseed swelled in some water. As I don’t like to have the whole grains in the pastry, I puree the „egg“ before adding it to the pastry Cream: Greek yoghurt, vanilla, cardamom, pistachio finely ground, lemon peel Topping: strawberries, vanilla, pistachio roughly chopped Mix all the ingredients of the pastry to a firm dough. Chocolate Nice Cream

Summer finally arrived in Switzerland! I need something ice cold, like ice cream but healthy. That’s why I am a huge fan of nice cream (=nice (and healthy) ice cream). It is so healthy, you could even eat it for breakfast. I do sometimes :-). For a nice crunch I add some taco nips to the ice cream. Yummy! Here I made some oriental cones with chickpea flour and a slight taste of cardamom. They are not as healthy as the ice cream but anyways they look so pretty and taste so good. I love to decorate the cones with chocolate and pistachio trimming. And the best about this ice cream: Unfrozen it is a super delicious chocolate pudding! Macaron Temptation

Who does not love macarons! Even if they are very sugary and not the healthiest option, sometimes they are just the best that can happen. And I really love to make them. Its process comes close to meditation. Macarons takes its time but it is worthwhile! I mean look at them, they are so gorgeous and a perfect small gift! This time I made four different flavors: Vanilla-Baileys, strawberry, pistachio and chocolate-espresso. The first three are filled with butter cream and the chocolate ones with chocolate ganache. When you make macarons it is very imported to you work exact to get a good result. So never overheat the sugar. Its perfect temperature is at 115 degrees celsius. And the dough should be fluffy with a perfect consistency: kind of liquid but not too liquid. But even if your macarons do not look perfekt they going to take great anyway! Açai Smoothie Bowl

I just acquire a taste for smoothie bowls. This won’t be the last post about smoothie bowls, promised! What is better than a creamy fruity and healthy breakfast? Just the energy boost you need in the morning. You can almost combine everything respectively what ever you have at home: Fruits, nuts, greens, superfoods… Today I’m going for a açai smoothie bowl. Açai is super healthy and you can buy it as a freeze-dried powder. So whenever you are in the mood for some açai you have some and you don’t have to worry about the storage life. To get the smoothie bowl creamy I use bananas oder chia seeds or both of it. Maca powder thickens the smoothie as well a little bit.
