Guilt free starwberry tarts

Summer is a combination of sun, swimming and lots of berries. I could eat them all day long. They’re so beautiful, colorful, vitamin packed and super tasty. So, what’s better for a light summer dessert? As I don’t eat processed sugar, this dessert is (as usually on my blog :)) totally guilt free. It’s a high fiber tart pastry, yoghurt cream and berry topping. You can literally eat them for breakfast. Recipe inspiration Pastry: flaxseed flour, oat flour, almond flour, coconut oil, flaxseed egg, pinch of sea salt, little bit of Marple sirup Hint: flaxseed egg is flaxseed swelled in some water. As I don’t like to have the whole grains in the pastry, I puree the „egg“ before adding it to the pastry Cream: Greek yoghurt, vanilla, cardamom, pistachio finely ground, lemon peel Topping: strawberries, vanilla, pistachio roughly chopped Mix all the ingredients of the pastry to a firm dough. I love burgers, however, I don’t need that much bread. So I started to prepare my burger with cabbage instead of using bread. And they’re even tastier, I swear! It tastes perfect and it’s even much more economic than the luxury parts. And here’s a trick to make all kinds of meat tender: sous-vide! When you sous-vide meat before putting it on the grill, the meat, including the cheaper sorts, becomes super tender and gets the perfect grilled flavor! But what exactly is sous-vide? Sous-vide is a cooking method known in gastronomy. The meat boils in a vacuum bag at a low temperature for some hours. This process is like ”aging“ the meat, similar to the dry aging method. I love to spend free days in Italy. It’s so close, there is mostly warm and sunny weather and the food…! The Italians really now how good food is made. So I love to make pasta and other Italian dishes at home – it always feels a little bit like holidays. And if time permits, i make the pasta by myself. For my zucchini pasta, I just put some zucchini noodles (also called zoodles) to the homemade spelt pasta and top it with some smooth parsley and grated parmesan or even better grated pecorino cheese.
