Cuajada – Spanish Dessert

Last year we traveled around in Spain during three weeks. I was an amazing road trip with lots of new impressions and new food. By chance we found a small sheep cheese farm with a small store. We bought some cheese and a so called Cuajada. And I fall for it with the first bite! Cuajada is actually just cheese curd – something I thought is quite gross. But it really isn’t. It looks and taste similar to panda cotta, but with half as much fat. You don’t put it on a plate like panda cotta, you just eat it out of the glass with some honey or whatever you like. And the best: it’s so easy and simple to make: warm some sheep’s milk up to 37 °C (98,6 °F), put the needed amount rennet in it and blend with a spoon gently just for some seconds. Last week we were invited for a barbecue at a friends house. I enjoy this casual evenings with good food and friends so much. Usually we divide the preparation of the food. So everyone bring something. When ever possible I go for the dessert. Even if I normally don’t eat that much sweets I really love to make desserts. Summer finally arrived in Switzerland! I need something ice cold, like ice cream but healthy. That’s why I am a huge fan of nice cream (=nice (and healthy) ice cream). It is so healthy, you could even eat it for breakfast. I do sometimes :-). For a nice crunch I add some taco nips to the ice cream. Yummy! Here I made some oriental cones with chickpea flour and a slight taste of cardamom. They are not as healthy as the ice cream but anyways they look so pretty and taste so good. I love to decorate the cones with chocolate and pistachio trimming. And the best about this ice cream: Unfrozen it is a super delicious chocolate pudding! Macaron Temptation

Who does not love macarons! Even if they are very sugary and not the healthiest option, sometimes they are just the best that can happen. And I really love to make them. Its process comes close to meditation. Macarons takes its time but it is worthwhile! I mean look at them, they are so gorgeous and a perfect small gift! This time I made four different flavors: Vanilla-Baileys, strawberry, pistachio and chocolate-espresso. The first three are filled with butter cream and the chocolate ones with chocolate ganache. When you make macarons it is very imported to you work exact to get a good result. So never overheat the sugar. Its perfect temperature is at 115 degrees celsius. And the dough should be fluffy with a perfect consistency: kind of liquid but not too liquid. But even if your macarons do not look perfekt they going to take great anyway!
