I’m a breakfast person. I love it healthy and super tasty. So I made delicious Chia Pudding with Cashew Cream and Match Ice Cream. It’s so simple and so yum! You should give it a try. INGREDIENTS:  Chia Pudding: coconut milk, chia seeds, cinnamon Cashew Cream: soaked cashew nuts, water, vanilla Matcha Ice Cream: frozen bananas, matcha powder, ground tonka bean Topping: cacao nips, puffed amaranth

    Almond milk is quite a hype now a days but it is nothing new. Already in Middle Ages people loved cook with or drink almond milk. It is a plant based alternativ to cow milk. It tastes pretty good but what is all about this milk?   Almond milk is actually just made out of water and almond oil. The best almond milk is the homemade. I did not find one milk that tastes as good as homemade one and the most almond milks contains stabilizers or other thing you do not really want to consume. So how to make almond milk by yourself? INGREDIENTS: peeled and soaked almonds, water. Soak some peeled almond in cold water over night or longer. There is nothing better then a refreshing ice cream with this hot weather. I’m enjoying la dolce vita in Tuscany right now and it’s incredibly hot. I’m seeking for gelato. And I’m looking forward to this fantastic nice cream waiting for me in my freezer at home. Sweets do not need to be unhealthy or artificial. The vanilla avocado nice cream is the best proof of it. I love simple, tasty and healthy food. I don’t understand, why healthy for a lot of people still means it tastes bad. Mostly it tastes even better, because of all the good and flavory ingredients. And the best about healthy desserts: you may even eat them for breakfast! I always dreamed of this as a child. As a kid I ate a lot of chocolate spread. There is a very famous one from Germany called Nutella. But all the chocolate spreads have a lot of bad ingredients. So I had to find a way to get a delicious and healthy homemade chocolate spread. And here we are! I use it for almost everything: on bread, on pancakes, with porridge, as ice cream topping, for cakes or as cup cake frosting. Use it were ever you like! And it is very easy and simple made. Since I first ate a great coconut chia pudding in Thailand two years ago, I’m in love with this pudding. But it is not that easy to make such a great one. It’s all about the coconut milk. If the milk is too creamy the pudding is fattening and has a fatty taste. If the milk ist mixed with coconut water it taste watery and wired. After trying a lots of different coconut milks I finally got a great one: coconut rice milk from alpro. The only bad thing about this milk, it contains admixture. But it’s the only one with a perfect taste. So I make an exception from time to time. Chocolate Nice Cream

Summer finally arrived in Switzerland! I need something ice cold, like ice cream but healthy. That’s why I am a huge fan of nice cream (=nice (and healthy) ice cream). It is so healthy, you could even eat it for breakfast. I do sometimes :-). For a nice crunch I add some taco nips to the ice cream. Yummy! Here I made some oriental cones with chickpea flour and a slight taste of cardamom. They are not as healthy as the ice cream but anyways they look so pretty and taste so good. I love to decorate the cones with chocolate and pistachio trimming. And the best about this ice cream: Unfrozen it is a super delicious chocolate pudding! These fluffy pancakes are so delicious and super healthy with lots of superfoods. A perfect start in the day. It is a great way to use override avocados. Combined with the matcha powder it’s a great energy boost!  Ingredients pancakes: avocado, matcha, egg, raw milk, honey, vanilla beans, buckwheat flour, baking powder. Fry the pancakes with some ghee on medium heat.Ingredients pancakes: avocado, Ingredients yoghurt creame: (selfmade) plain yoghurt without sweetener, raw raspberry jam*, tonka bean. Ingredients topping: strawberries, raspberries, pomegranate seeds, raw raspberry jam*, roasted almond slivers, roasted pecan. *smash some fresh or defrosted raspberries and sweeten it a little bit if necessary with honey, add some chia seeds and let it thicken slightly. Now you’ve got the most delicious and super healthy raw beery jam you’ve ever eaten!
