I can’t get enough of nice cream! And there are so may ways and flavors of nice cream. They are healthy, yummy, refreshing and so easy and simple made. There is nothing else to say! 😉 Today a strawberry/raspberry nice cream with a little bit of vervain. And as all of may nice creams you can eat this one unfrozen as a delicious strawberry/raspberry pudding. It may sound strange but it is the best vanilla pudding I ever had! Inspired by the beautiful Lynn Heaven Healthy I made this healthy and super yummy vanilla pudding. Add some passion fruit as a fresh and fruity topping. And if you have some leftovers (but I don’t think so! :-)) you can freez them and you get a perfect vanilla nice cream! Chocolate Nice Cream

Summer finally arrived in Switzerland! I need something ice cold, like ice cream but healthy. That’s why I am a huge fan of nice cream (=nice (and healthy) ice cream). It is so healthy, you could even eat it for breakfast. I do sometimes :-). For a nice crunch I add some taco nips to the ice cream. Yummy! Here I made some oriental cones with chickpea flour and a slight taste of cardamom. They are not as healthy as the ice cream but anyways they look so pretty and taste so good. I love to decorate the cones with chocolate and pistachio trimming. And the best about this ice cream: Unfrozen it is a super delicious chocolate pudding! INGREDIENTS Chocolate Nice Cream: avocado, banana, caco powder, soaked dates, soaked cashew nuts, caco nips, vanilla, agave syrup, almond milk Cones: chickpea flour, butter, sea salt, powder sugar, egg withe, vanilla, cardamom. Zucchini Blossom Salad

Zucchini blossoms are not just beautiful they are super savory and there are multiple ways to prepare them. This time I went for a simple one: in the oven with a little bit of olive oil and sea salt. But for a rich and healthy salad you need more than just zucchini blossoms. I love to combine some warm veggies withe raw one. So beside the zucchini blossoms I baked as well the beetroot and the radishes and putted a poached egg on top of the salad. INGREDIENTS: Avocado, zucchini blossoms baked with olive oil and sea salt, beetroot backed, radish backed, poached egg, radish sprouts, raw kale, lollo salad, spring onion, lemon olive oil, cider vinegar, sea salt.

Matcha Avocado Pancakes

These fluffy pancakes are so delicious and super healthy with lots of superfoods. A perfect start in the day. It is a great way to use override avocados. Combined with the matcha powder it’s a great energy boost!  Ingredients pancakes: avocado, matcha, egg, raw milk, honey, vanilla beans, buckwheat flour, baking powder. Fry the pancakes with some ghee on medium heat.Ingredients pancakes: avocado, Ingredients yoghurt creame: (selfmade) plain yoghurt without sweetener, raw raspberry jam*, tonka bean. Ingredients topping: strawberries, raspberries, pomegranate seeds, raw raspberry jam*, roasted almond slivers, roasted pecan. *smash some fresh or defrosted raspberries and sweeten it a little bit if necessary with honey, add some chia seeds and let it thicken slightly. Now you’ve got the most delicious and super healthy raw beery jam you’ve ever eaten!
