I try to avoid food waste when ever possible. There is so much carrot greens on the carrots and it would be a shame to throw it away. So what can you do with a lot of it? A wonderful and tasty pesto! Pesto, especially this one, is quite more then a pasta sauce. You can use it as spread, with savory pancakes, with salads, as dip or as whatever you like. Be creative! There is nothing better then a refreshing ice cream with this hot weather. I’m enjoying la dolce vita in Tuscany right now and it’s incredibly hot. I’m seeking for gelato. And I’m looking forward to this fantastic nice cream waiting for me in my freezer at home. Sweets do not need to be unhealthy or artificial. The vanilla avocado nice cream is the best proof of it. I love simple, tasty and healthy food. I don’t understand, why healthy for a lot of people still means it tastes bad. Mostly it tastes even better, because of all the good and flavory ingredients. As a kid I ate a lot of chocolate spread. There is a very famous one from Germany called Nutella. But all the chocolate spreads have a lot of bad ingredients. So I had to find a way to get a delicious and healthy homemade chocolate spread. And here we are! Since I first ate a great coconut chia pudding in Thailand two years ago, I’m in love with this pudding. But it is not that easy to make such a great one. It’s all about the coconut milk. If the milk is too creamy the pudding is fattening and has a fatty taste. If the milk ist mixed with coconut water it taste watery and wired. After trying a lots of different coconut milks I finally got a great one: coconut rice milk from alpro. The only bad thing about this milk, it contains admixture. But it’s the only one with a perfect taste. So I make an exception from time to time. Summer finally arrived in Switzerland! I need something ice cold, like ice cream but healthy. That’s why I am a huge fan of nice cream (=nice (and healthy) ice cream). It is so healthy, you could even eat it for breakfast. I do sometimes :-). For a nice crunch I add some taco nips to the ice cream. Yummy! Here I made some oriental cones with chickpea flour and a slight taste of cardamom. They are not as healthy as the ice cream but anyways they look so pretty and taste so good. I love to decorate the cones with chocolate and pistachio trimming. And the best about this ice cream: Unfrozen it is a super delicious chocolate pudding!
