Since I first ate a great coconut chia pudding in Thailand two years ago, I’m in love with this pudding. But it is not that easy to make such a great one. It’s all about the coconut milk. If the milk is too creamy the pudding is fattening and has a fatty taste. If the milk ist mixed with coconut water it taste watery and wired. After trying a lots of different coconut milks I finally got a great one: coconut rice milk from alpro. The only bad thing about this milk, it contains admixture. But it’s the only one with a perfect taste. So I make an exception from time to time.
Chia pudding: chia seeds, coconut milk, vanilla
Ice cream: frozen mango, frozen banana, coconut milk
Topping: granola, blueberry, cacao nips
