Homemade Mozzarella

Have you ever made cheese by yourself? It’s actually easier as it seems to be and the result is so worthy, I promise. Homemade cheese just taste some much better and you know there are just good ingredients used. Some months ago I started with cream cheese – a very easy one! I never going to buy cream cheese again. There is to much stabilizer and stuff inside the cream cheese from the super market. Then I tried ricotta, quit easy as well and so good. And then I found this great mozzarella recipe on Food52. I just had to give it a try. Mozzarella takes lot more time than the other cheeses before, but from time to time a going to make mozzarella by myself instead of buying some. And I can really recommend you to give it a try! And another plus: you get not just great mozzarella you get as well a lot of super healthy and tasty whey! Macaron Temptation

Who does not love macarons! Even if they are very sugary and not the healthiest option, sometimes they are just the best that can happen. And I really love to make them. Its process comes close to meditation. Macarons takes its time but it is worthwhile! I mean look at them, they are so gorgeous and a perfect small gift! This time I made four different flavors: Vanilla-Baileys, strawberry, pistachio and chocolate-espresso. The first three are filled with butter cream and the chocolate ones with chocolate ganache. When you make macarons it is very imported to you work exact to get a good result. So never overheat the sugar. Its perfect temperature is at 115 degrees celsius. And the dough should be fluffy with a perfect consistency: kind of liquid but not too liquid. But even if your macarons do not look perfekt they going to take great anyway! I love vietnamese food like the famous soups „phò“ or the popular summer rolls. What I especially love about summer rolls is how easy they are made and almost all ingredients are possible. You can be so creative! Fill them with whatever you have at home and enjoy totally new flavor compositions.
